【超市大搜查】高鈉易致水腫增患胃癌風險 一文看清15款「低鈉」烏冬名單

第五波疫情持續嚴峻,不少市民留家抗疫減少外出,烏冬是不少家準備給子女的常見食材之一。TOPick早前檢視市面上60款常見烏冬,結果發現,有15款烏冬屬低鈉。有營養師曾指出,進食過多高鈉食品易致水腫,更有研究指,進食過多鹽和鹽醃的食物,有機會增加罹患胃癌的風險.

據食安中心資料顯示,本港《食物及藥物(成分組合及標籤)規例》,每100克固體食物含不超過120毫克鈉可稱為「低鈉」,另據食安中心印製的「購物指南卡」,每100克含超過600毫克鈉的食物可視為「高鈉」。
世界衞生組織亦建議,健康的成人(16歲或以上)每日攝入少於2,000毫克的鈉;而衞生署對小朋友亦有指引,3歲以下盡量愈少愈好,建議4至6歲小朋友每天攝取少於1200毫克的鈉,7至10歲則不多於1500毫克鈉,11歲則不多於1900毫克的鈉。
TOPick近期檢視市面上60款常見烏冬,結果發現,有15款烏冬屬低鈉,當中包括北海道100%小麥無鹽急凍烏冬,每100克鈉含量為0毫克;都一烏冬,每100克鈉含量為35毫克。

而在該次檢視中,另有26款屬較低鈉烏冬,即每100克烏冬,鈉含量不超過600毫克,當中包括福稻亭稻庭風烏冬,每100克鈉含量為157毫克;島田屋真打讚岐烏冬(急凍),每100克鈉含量為152毫克。

營養師李杏榆(Annie)早前接受TOPick訪問時表示,很多食物本身天然已有鈉質,如海產類、新鮮蔬菜、水果,如再食添加的鈉易超標。攝取過多鈉易水腫,再嚴重會出現高血壓。
另據食物安全中心資料顯示,鈉質有助維持體內細胞外液和酸鹼的平衡,也是神經傳送和肌肉收縮必需的元素。腎臟負責調節體內鈉質的分量,當體內鈉水平偏低,腎臟便會貯存鈉;當鈉水平偏高時,則會在尿液中排出多餘的鈉。
若攝取過多鈉質,有機會引致高血壓。世衞及世界癌症研究基金會的專家報告均指,進食過多鹽和鹽醃的食物,有機會增加罹患胃癌的風險。
